Waffles.
I don’t like ’em.
I don’t know why, but they’ve never really interested me. The only waffles I have eaten were nasty. If I don’t like something, I’m not swallowing it. I usually spit waffles right out.
Last month, I went to Salt Lake City for the Everything Food Conference. For breakfast one morning, Waffle Love catered…and I tried them.
HOLY SMOKES. THESE WERE THE BEST THINGS I’VE EVER PUT IN MY MOUTH. Like, ever.
I DON’T EVEN LIKE WAFFLES!!!
I briefly thought, oh man – I need to open a Waffle Love franchise in Iowa so that I can eat these like, every day.
Then my rational side kicked in and was like, no – Kathy. Bad idea. Let’s just find a recipe. {Thank goodness my husband is ok with my crazy antics}
I found a recipe on Ashlee Marie, but needed to make a few tweaks…and it came out perfectly.
If you don’t care about carbs, calories, or your waistline…then these are for you. Or, if you’ve got a cheat meal…these are for you.
You’ll never go back to regular waffles ever again.
These are known as liege waffles, which require a special type of sugar I’ve only been able to find on Amazon. This is the only kind of sugar that’ll give you the crunch and taste you’re looking for. It keeps the outside crunchy, the inside super soft and moist, with little bursts of this sugar. It’s like a party in your mouth.
You don’t really need a super fancy waffle maker, either. I got this waffle iron for less than $30 online – shipped!
I told every single person I knew about these waffles when I had returned from Salt Lake City. I bragged ’em up so much. I was a little nervous when I got my supplies from Amazon. What if these weren’t as magical tasting? Can I replicate it?
I think my husband’s response says it all (I had made 24 waffles. Oops):
“I wish we didn’t have leftovers. I’m going to get so huge.”
These were so good, we ate ourselves darn near into a food coma. We had leftovers because I made so many, but they were gone the next day!
Even the ones I accidentally burned were devoured. The key to making these is to not have the heat turned up too high – sugar burns at 375 degrees. I had the burner on high – but found the sweet spot around medium. I cook ’em for about a minute on medium on one side, then flip them over for another 1.5-2 min on the other side. I just used one of those squares on the waffle iron.
Prepare to have your life flipped upside down – in a good way.
