Au Revoir, Summer. You’ve been good to me.
In August, we were so blessed to get to drive out to Oregon to see my mom and sisters. I made that trip many times with my dad as a child. It was so bittersweet making those same memories with my children.
That alone was over 4,000 miles of “are we there yet?”, the “ABC” game, almost DYING after JUST missing a moose coming off the Rockies who turned at the last moment, rotors going out in the Rockies and almost dying (again), and many, many, many tumbleweeds.
Starting in Iowa, we traveled through Minnesota, South Dakota, Wyoming, Montana, Idaho, Washington, and finally: Oregon.
We checked out Wall Drug, Sturgis Motorcycle Rally, Mount Rushmore, Bear Country USA, the ocean, and many other really cool places. We drove straight through, aside from stopping at random gas stations to sleep for 3-4 hours in the middle of the night.
I didn’t eat that healthily on the way there and my legs paid for it. Never in my life (ok. so maybe when I was pregnant) have I ever experienced swelling in my extremities. When we arrived to the beach house my ankles and feet were so swollen it hurt to walk. I was happy to finally be able to put my feet up!
So. Lesson learned: Don’t eat like crap.
For the ride home, we stopped at a few grocery stores to keep our budget – and nutrition – in check.
Here are some of my favorites we picked up for the drive:
• BOOMCHICKAPOP Lightly Sweet Popcorn
• Mixed fruit
• Pistachios (or really, any nut – in moderation)
• Homemade jerky
• Whole grain tortilla wraps stuffed with yummy chicken, hummus, veggies, or whatever else your heart desires
