Do you remember how I told you about picking up some Glutino gluten-free cookies at Walmart a few weeks ago? I’ll admit…since my dad passed away I’ve probably indulged more than I should. My husband does his best to stay away from treats, but since tomorrow is Valentine’s Day, he’s decided to indulge with me.
While I did make these for tomorrow, I couldn’t resist having a bite or two three. These are super easy to assemble but are so pretty!
Here’s what you need: {You can make as many of these as you want–you don’t need very much chocolate because it’s just for dipping}
- Red Velvet Cake Ice Cream or your fave ice cream

Glutino Gluten Free Cookies

Dark Chocolate or Almond Bark (optional)
Instructions:
- Using an ice cream scooper, put one scoop of ice cream on a cookie. Take another cookie and smoosh it together like a sandwich.
- Freeze for 15 minutes
- While your cookie is freezing, melt the chocolate in a double-boiler or according to package directions. DO NOT BURN IT. Typically, you can put the chocolate in the microwave for 1 minute, then stir, and then in 15 second intervals.
- Take your cookie and dip half of it in the chocolate.
- Enjoy! And if you eat too many….might I recommend my fave workout?
